Marriage and Medical School Thus Far

Well, we have been in Colorado for a little over three weeks now (I can't believe it) and it's safe to say that life in Colorado is good. It is oh, so good. :-) The best part is that Jayce is still Jayce and I am still me, and despite the rigors of medical school, we still have a life together. I know what you're thinking, "Well, you're only a couple of weeks into it..." but so far so wonderful and I'll take what I can get. :-)

Jayce leaves for school every morning around 7:00, sometimes earlier and stays at school until 6:00 p.m., when he comes home to eat dinner and spend a couple of hours with me and Cameron. Then at 8:00 p.m. he'll start studying again and usually goes until sometime between 10:00 and 11:00. I tell you what though, those two hours of quality time make a load of a difference. We both look forward to it every day.

We have been eating a plant-based diet this month as an experiment, so part of the fun has been eating dinners together and deciding what we think about some of the meals, but you can read more about that here

We also watched Star Wars episodes 5 and 6 broken up on our breaks, as well as Anastasia (singing along the whole way). By the way, I haven't watched the first Star Wars movies in forever and we both couldn't help laughing at the scene where Luke learns that Vader is his dad. Anybody else have that reaction?? It's hilarious. 

During one of the movies we had a Jelly Belly taste test as well. First we went through and categorized all of them by color and then ate one of each. We had to try to guess the flavor and in the end decide which ones were our favorites. There are so many flavors though and some of them look so similar! We both really like the reds, oranges, and green ones. My least favorite is by far cappuccino though. Bleh, it gives me shudders in my stomach just thinking about it.



Along the same lines, we had a waffle topping taste test because I was too lazy to make a real dinner and because we felt like cheating on the whole plant-based diet thing (which we have done a few times this month...and we're only half way through it. Yikes.) We used what we had lying around the kitchen: honey, peanut butter, syrup, applesauce, peaches, and blueberries. Hands down syrup is still the best. That rich syrupy goodness just melts the bread right in your mouth. My ideal waffle would have butter (in my dairy incorporated days. sigh.), syrup, blueberries, strawberries, some fresh peaches, and maybe a dab of whipped cream on top. Mmm...mmm...good.

And Cam doesn't miss out on all the fun. He had a good time snuggling with Dad while I finished dinner. I think this was after one of his screaming fits though...and those are not so fun, but luckily few and far between. He did have a few this week though because he got a cold. :-( It was sad and he's still not totally over it. Fever, runny nose, perhaps sore throat, and now a cough. Poor boy. I have to admit the only good part about him getting sick was that when he had his fever he was really snuggly. It didn't last long because I gave him some baby tylenol and it worked wonders, but I did enjoy me some snuggles.

    I only have one comment on the waffles: You failed to sample whipped/spun honey. It's amazing.
    And in your dairy incorporated days you could have used honey butter. :(
    Honey butter and peanut butter on waffles is one of my faves. Add bananas and it's out of the park!
